Greek Omelette with Egg Whites

If you're looking to reduce carbs and increase protein egg whites are your friend! This Greek inspired omelette is made with just the egg whites, so it's delicate in texture and low in cholesterol.

No salt required as you get the flavour from the olives and Feta Cheese.

Ingredients

  • 4 egg whites

  • 70g Feta cheese in small cubes

  • Handful of fresh basil

  • 1/2 cup Green pitted olives

  • 100g vine tomatoes or baby plum tomatoes chopped roughly

  • 1 tsp olive oil


Method

  • whisk together the egg whites until a little frothy

  • chop vegetables

  • Heat a little olive oil in a frying pan on medium to high heat

  • Add the egg white mix and coat the bottom of the pan

  • Once the bottom is starting to brown add the other ingredients as pictured above

  • After a few minutes fold the plain side of the omelette over onto the ingredients

  • Serve with cracked black pepper
