For a light lunch or supper this is a quick to prepare, wonderful dish.
The most important element of this dish is the preparation of the raw Kale, which needs to be massaged to achieve the soft texture.
Wash and dry the kale, pour some good quality olive oil onto your hands and sprinkle the kale with salt, then massage until the leaves turn deep green and become soft. There's no short cut for this, and it's well worth the effort.
You won't need to add any salt before serving, just a twist of black pepper.

Ingredients
65g Halloumi cheese
20g cashew nuts
100g raw kale
25g dried cranberries
120g drained tinned butter beans (you could swap for any pulse in your cupboard)
A few orange segments, de-skinned and sliced thinly
1 dessert spoon olive oil + 1/2 tsp salt for kale prep
Method
Wash, dry & massage Kale in oil and salt as above
Dry fry Halloumi slices on a medium heat until charred
Rinse butter beans and add to the kale with other ingredients
Season with black pepper to taste
