Home Made Baked Beans

The humble baked bean.....not so humble when you make it yourself! This is a delicious and nutritious recipe. You can also make a big batch and freeze them.

I like mine on wholemeal toast and with a fried egg on top.

Homemade Baked Beans on Wholemeal Toast


Ingredients

  • 100g tinned and drained butter beans

  • 1 tsp olive oil

  • 1tsp tomato puree

  • 1 vine ripened tomato (large) or half a can of chopped tomatoes

  • 1 shallot or half an onion very finely chopped

  • 1/2 tsp paprika

  • 1/2 tsp brown sugar

  • wholemeal bread toasted (no butter spread)

  • 1 medium free range egg fried

  • fresh parsley to serve


Method

  • lightly fry the onion in olive oil on low heat until soft

  • Add puree, paprika and brown sugar

  • Cook for 1 minute stirring then add tomatoes

  • Allow to cook down on a low simmer for 10-15 mins

  • Add butter beans and season, simmer for 5 mins

  • Toast bread and fry egg.

  • Serve and sprinkle generously with fresh parsley and black pepper.
