Prawn & Cauliflower Fried Rice

Cauliflower takes spices exceedingly well. This spicy stir fry certainly doesn't hold back on flavour.

High in protein too from the prawns and black beans.

Takes just a few minutes to make and is damn tasty!

Prawn & Cauliflower Stir Fried Rice


Ingredients

  • 100g Cauliflower florettes

  • 50g Brown basmati rice

  • 100g Black beans drained

  • 100g Frozen prawns defrosted

  • 1.2 tsp 5 spice powder

  • 1 Clove garlic chopped finely

  • 1 tbsp fresh dill

  • Fresh dill to taste (or coriander works well too)

  • 1/2 tbsp olive oil or coconut oil

  • Drizzle of hot chilli sauce


Method

  • Cook the rice (about 25 mins) until tender and drain

  • Blanch cauliflower for a minute in boiling water and drain well

  • Stir fry in oil the garlic, cauliflower and add 5 spice

  • Add the cooked rice and drained black beans fry for a minute

  • Next add the prawns

  • Continue to stir fry on a high heat for 3-4 minutes

  • Drizzle with hot chilli sauce and sprinkle with fresh dill or coriander
