This salad is fresh and filling. The ingredients can be as fancy as you like, but its equally good with the supermarket basics but I love to use fresh dill to add a bit of a citrussy undertone.
Ingredients
2 soft boiled eggs
1/2 tin of tuna in brine
6 chunky slices of cucumner
one medium sized fresh tomato cut into 1/8ths
4 to 6 mini gem lettuce leaves (I love the heart for the additional cruch it brings)
8 to 12 capers - depending on your taste
a sprinkling of fresh dill
Method
This is very much a 'how you like it' method. I tend to layer the lettuce and cucumber, scatter with the chopped tomoatos, add the tuna and pop the eggs on top.
