Need to up your protein intake? This is a super quick and easy way to do just that.

The capers really bring the flavour of the eggs and tuna alive!

Ingredients

  • 50g Mixed salad - your choice, I used cucumber, radish, tomatoes, iceberg lettuce

  • 1 hard boiled egg

  • 105g tin of line caught tuna in spring water

  • 8g Spanish capers

  • Fresh herbs of your choice



Method

  • Chop and combine salad vegetables

  • Drain and flake tuna

  • Hard boil 1 medium free range egg and cool

  • Plate up ingredients above, sprinkle chopped capers and herbs
