Turkey Stroganoff

Turkey is high in protein, B vitamins, selenium, zinc and phosphorus so full of amazing health benefits.

I love this simple dish, which is quick and easy to make, so a firm favourite on busy week nights.

You can play around with the types of mushrooms, and swap out black beans for kidney beans or peas.

Turkey, chestnut mushrooms, cream, black beans and basmati rice
Simple Turkey Stroganoff


Ingredients

  • 100g raw turkey breast

  • 100g chestnut mushrooms

  • 120g black beans drained

  • 30ml double cream - for less calories use low fat creme fresh

  • 1 tbsp chopped spring onion

  • 1 tsp paprika

  • 50g basmait rice

  • 1 dessert spoon olive oil for frying

  • 1 tbsp fresh parsley chopped



Method

  • Heat olive oil and fry turkey breast pieces until lightly brown

  • Add mushrooms and stir fry for a few minutes

  • Sprinkle paprika to coat everything then add the cream and stir.

  • Pop the chopped spring onion in and stir.

  • Cook basmati rice until tender and stir in black beans until heated through & drain

  • Dish up and sprinkle with the chopped parsley on top

  • Season with black pepper to taste
