Ingredients
100g raw turkey breast
100g chestnut mushrooms
120g black beans drained
30ml double cream - for less calories use low fat creme fresh
1 tbsp chopped spring onion
1 tsp paprika
50g basmait rice
1 dessert spoon olive oil for frying
1 tbsp fresh parsley chopped
Method
Heat olive oil and fry turkey breast pieces until lightly brown
Add mushrooms and stir fry for a few minutes
Sprinkle paprika to coat everything then add the cream and stir.
Pop the chopped spring onion in and stir.
Cook basmati rice until tender and stir in black beans until heated through & drain
Dish up and sprinkle with the chopped parsley on top
Season with black pepper to taste
